For perspective, Dr. Johanna Budwig treated people with cancer using fresh, unheated flax oil and flax seeds combined with cottage cheese. The Weston Price Foundation recommends fresh raw wheat germ oil in small amounts as a super food. It’s industrially processed oils that are health destroying.
One of the most depressing articles I've read, almost nothing left to eat, even my own free range chickens demolished as they like a little corn, no eating out no bacon with my compromised eggs
i was miserable for almost 40 years and had my fillings out at age 48. Two years later i was so much happier, less depressed more motivated. It is a journey. now i have replaced safflower oil with coconut oil. Keep you posted.
I'm considering that now for my husband and I. It will cost a small fortune to replace the extracted teeth with bridges, partial dentures, etc. But it will likely greatly improve our health.

It was not even the Omega 6 thing, it was that the oils become "polymers" something closer to a varnish and or a plastic - think McDonalds Happy Meal not rotting for 24 months? longer?

As all refined oils and carbs are hydro-carbons of sorts.
The other big problem of the 20th century is stale rancid whole grain flours. Once you grind those grains - or anything down to millions of pieces they oxidize and polymerize....
This was the reason white flour was developed.

For years, I have railed against most of these industrial "vegetable oils." Canola oil is so bad that it should only be used for furniture polish and to run biodiesel engines. That is it.

If you can get good olive oil, it is great, but I do not recommend heating it above about 180 degrees, F. Doing so, damages the delicate polyphenols that are so good for you. and heating it much higher, may turn some olive oils into carcinogens.
Thanks for this depressing article! It reinvigorates me all the time to read info like this. But it seems increasingly difficult to navigate the grocery store and markets for true good food. I pray over my food and ask God to make our food healthful for us. It is the most amazing thing that the farmers have bought so heavily into this corrupt evil system. I would like to know why because most farmers seem to be very hard working , humble, honest people who are just like those of us who care about humanity. Surely their farms cannot continue this way and flourish. The soil will or is ruined.
That is a great question: Why do farmers buy into this evil system? My opinion is that the extreme and inhumane economics and financing environment that farming all but has to exist within in this country leaves them very little alternative.
Want the details? Look into the obscene abuse of patent law and related enforcement that Monsanto employed for years to essentially enslave farmers in the US and Canada.
Sesame oil is good stuff. But it does not keep well unless it is literally vacuum-sealed and stored in a refrigerator. Otherwise, it becomes rancid really quickly. I am also not entirely sure how heat-stable it is for cooking.
So far, for cooking I only use what I absolutely know is safe and healthy: coconut oil, avocado oil, and butter.
When I can get good quality olive oil, I use it for flavor and for the polyphenol health benefits, but not for cooking. So for dishes that want that olive oil flavoring, I use the avocado oil for the cooking and then add in the olive oil after the dish has been cooked and before I serve it.

You have made seed oils easy to understand. Years ago I first heard about them from Mercola. And then he kept mentioning them again and again. It took me a while to understand what they are. Your article defines them very well I think, especially

We eat primarily organic whole foods (we even removed pork from our diets a few years ago because of parasite risk and pig being monogastric). All food is prepared from scratch at home.
Your article has just reminded me of something I had forgotten, I had completely forgotten about the chicken feed. Aaargh. We eat organic pastured eggs which are only reared during the spring/summer because they heavily forage, and are outside all the time. (electric fence and livestock guard dogs keep them safe). But I suspect their feed contains corn, the farmer is well meaning and uses regenerative processes, but won’t be an expert on linoleic acid.
Back to the drawing board for me..

I use coconut oil always. Olive oil is great on food as is, but not for cooking. It breaks down and becomes rancid.
Avocado oil is also fine. It is even good for cooking.

I think if you use organic chicken breast and eggs, it's ok.
Organic chickens can be fed organic corn or soy. You end up with the same issue.
